Preparation

Methods
Baked or broiled is the classic and is hard to improve on. Also classic as Fish and Chips.

Basics
Try roasting your nice thick piece of cod. If you have a part of the fillet that is thinner you can fold it over to make it cook evenly. Pat the fish dry and season with salt and pepper. Use a nice wide pan that can go in the oven. Pre-heat your oven to 450. Get the pan very hot on a stove flame, and add a table spoon of vegetable oil. When the oil smokes just a little bit put your fillets on and do not move them. Leave it on until the heat comes back into the pan (it will sizzle). Then, put in pre-heated oven and roast for 7 minutes. Remove and serve with the seared side up.
