Red’s Best Atlantic Swordfish is either handline, harpooned, or longlined by American or Candadian fishing vessels. These fleets are heavily regulated, which has lead to the full recovery of swordfish stocks. We are committed to the hard working fishermen who risk their lives to catch this fish in an ecologically responsible manner. The American and Canadian fleets embark from ports up and down the coast and unload their catches at ports nearest to the ever-changing catch area.

Perfect grilling fish. Also try sautéing.

Likes to be marinated. Should be cooked through. Try pairing with really flavorful foods. Will stand up to a lot of different flavors.

Basics
Season with olive oil, salt and pepper. Put on hot, greased grill for 12 minutes per inch, flipping half way through. Serve with anything.

Species

Atlantic Swordfish (Xiphias gladius, a.k.a. Broadbill, Espada, and Emperado) follow the baitfish up and down the gulf stream, which runs along the continental shelf. The amount of swordfish landed in the United States has steadily dropped over the last two decades, and the population is now even 5% above the Federal target levels. Swordfish are not known to be farmed in captivity (no aquaculture).

An Atlantic Swordfish can live more than nine years and weigh over 1500 lbs. Females grow faster than males. They eat groundfish like flounder and invertebrates like squid. They are top predators, but sometimes young ones can be preyed upon by sharks.
