Traditional fish markets can only do so much. No matter how efficiently they get their fish from vendors, they still have to anticipate what you will want, and stock it as inventory in the hopes you will come in and buy it. The rest of the catch can go along through the traditional chain of supply.

A: myth that we intend to prove wrong is that seafood must be consumed the day it is purchased. How much time has passed since the catch? When our families catch fish and put it in the refrigerator, it lasts over a week. We can re-create that for you. Fish delivered to your home will last up to 4 days in the refrigerator and fish delivered FedEx will last 3. For maximum shelf-life, put your portions in a bowl of ice and change the ice as it melts.
A: Each portion will be delivered on ice in a tamper-evident resealable bag.
