Fair Trade

Red’s Best fish is either handline, harpooned, or longlined by American or Candadian fishing vessels. These fleets are heavily regulated, which has lead to the full recovery of swordfish stocks. We are committed to the hard working fishermen who risk their lives to catch this fish in an ecologically responsible manner. The American and Canadian fleets embark from ports up and down the coast and unload their catches at ports nearest to the ever-changing catch area.

Preparation

Methods
Quickly Sauté, broil or bake. Not for the grill.

Style
Small, firm, flat whitefish. Does not need a lot of flavor added. Subtle in flavor. The perfect fish for a seafood rookie. A great way to get your kids to eat seafood.

Suggestions
Goes well with other complimentary seafood flavors, like crabmeat. Very easy to roll up with a stuffing inside. Simple is good. Pairs well with shellfish. Cook quickly.

Basics
Medium/hot sauté pan with oil and butter (add to the pan after its hot). Flour or crumb both sides of the fillet and cook until brown on both sides. Should be 2-3 minutes each side.
