Preparation

Methods
Sauté, broil or add last second to a sauce or soup. Do not overcook, can be eaten raw. If adventurous try ceviche/raw.

Style
The candy of the sea. Will take a sear like a sea scallop and will turn a nice brown.

Suggestions
Cook very quickly. These can not be underdone. Basic is better.

Basics
Use a hot sauté pan with a little oil and a little butter. Season scallops with salt and pepper. Add to pan, when they start to brown shake them around a little, cook for another minute, add lemon juice and serve.

Species

Martha’s Vineyard Bay Scallops are much sweeter than Sea Scallops and can be eaten raw.
